Method

Preparing the Octopus

    Cleaning the Octopus

    Rinse the octopus under cold running water to remove any sand or debris. Remove the beak and ink sac if present.

    Cooking the Octopus

    In a large pot, bring water to a boil. Add the cleaned octopus and a pinch of salt. Boil for 30-40 minutes until the octopus is tender. Test by piercing with a fork.

    Grilling the Octopus

    Once cooked, remove the octopus from the pot and let it cool. Cut the tentacles into manageable pieces. Preheat the grill to medium-high heat. Brush the octopus pieces with olive oil, and season with salt and black pepper. Grill for about 3-4 minutes on each side until charred.

    Finishing Touch

    Squeeze fresh lemon juice over the grilled octopus just before serving.

Making the Citrus Vinaigrette

    Mixing Ingredients

    In a small bowl, combine orange juice, lemon juice, honey, and minced garlic. Whisk together until well combined.

    Seasoning the Vinaigrette

    Add chopped fresh parsley, salt, and black pepper to the mixture. Adjust seasoning to taste.

    Serving

    Drizzle the citrus vinaigrette over the grilled octopus just before serving.
