Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or in a microwave in 30-second increments until smooth. Allow it to cool slightly.

Prepare the Egg Yolks
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Combine Chocolate and Egg Yolks
Gradually mix the melted chocolate into the egg yolk mixture, stirring until well combined.

Whip the Heavy Cream
In another bowl, whip the heavy cream with the vanilla extract until soft peaks form. Gently fold the whipped cream into the chocolate mixture, being careful not to deflate it.

Chill the Mousse
Divide the mousse mixture into serving cups and refrigerate for at least 2 hours, or until set.

Serve the Mousse
Before serving, top each mousse with a dollop of whipped cream and sprinkle with chocolate shavings.
