Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolk until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture and stir until fully incorporated. Add the vanilla extract and mix well.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour and salt into the mixture. Gently fold until just combined, being careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Evenly distribute the cake batter into the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft and jiggly.

  3. 8

    Cool slightly

Remove the ramekins from the oven and let them cool for 1-2 minutes before serving.

Serving

  1. 9

    Serve with Ice Cream

Carefully invert each ramekin onto a plate. The cake should release easily. Serve immediately with a scoop of vanilla ice cream on the side.

  2. 10

    Garnish

Dust with powdered sugar and add fresh berries on top, if desired.
