Method

Preparation of Fish

  1. 1

    Seasoning the Fish

Pat the Chilean Seabass fillets dry with a paper towel. Season both sides generously with salt and black pepper.

  2. 2

    Marinating the Fish

In a bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, and thyme. Place the seasoned fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes, preferably for 1-2 hours for enhanced flavor.

Cooking the Fish

  1. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 4

    Bake the Fish

Place the marinated Chilean Seabass fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.

Preparing the Vegetable Side

  1. 5

    Seasoning the Asparagus

While the fish is baking, prepare the asparagus. Toss the trimmed asparagus with olive oil, salt, and black pepper in a bowl.

  2. 6

    Sautéing the Asparagus

Heat a skillet over medium-high heat. Add the seasoned asparagus and sauté for 5-7 minutes until tender-crisp and bright green.

Serving

  1. 7

    Plating the Dish

Once the fish is cooked through, remove it from the oven. Plate the Chilean Seabass alongside the sautéed asparagus. Drizzle any leftover marinade over the top if desired and serve immediately.
