Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Crust

    In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles wet sand.

    Form the Crust

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from the oven and set aside to cool.

Filling Preparation

    Make the Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

    Add Sugar and Sour Cream

    Gradually add the granulated sugar and continue to mix until well combined. Then, add the sour cream and vanilla extract, mixing until smooth.

    Incorporate Eggs

    Add the eggs, one at a time, mixing on low speed until just combined. Be careful not to overmix.

    Pour into Crust

    Pour the cream cheese filling over the cooled crust, smoothing the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

    Chill the Cheesecake

    After cooling, cover the cheesecake and refrigerate for at least 4 hours or overnight for best results.

Topping Preparation

    Prepare the Berries

    In a small bowl, toss the fresh mixed berries with powdered sugar. Let them sit for about 10 minutes to release their juices.

    Once the cheesecake is chilled, remove it from the springform pan. Top with the berry mixture and garnish with fresh mint leaves before slicing and serving.
