Salad Preparation

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut each sprout in half lengthwise.

Fry the Brussels Sprouts
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the halved Brussels sprouts, season with salt and pepper, and fry for about 8-10 minutes until they are crispy and browned, stirring occasionally.

Add Parmesan (optional)
If using, sprinkle the Parmesan cheese over the Brussels sprouts and cook for an additional 1-2 minutes until the cheese is melted and slightly crispy.
Dressing Preparation

Mix the Dressing
In a small bowl, whisk together the Dijon mustard, apple cider vinegar, honey (or maple syrup for vegan), 4 tablespoons of olive oil, salt, and pepper until well combined.
Assembly

Combine and Serve
In a large bowl, combine the fried Brussels sprouts with the Dijon dressing. Toss well to coat. Serve warm or at room temperature.
