Sear the Lamb Shanks
In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Season the lamb shanks with salt and black pepper. Once the oil is hot, add the lamb shanks and sear them on all sides until browned (about 4-5 minutes per side). Remove the shanks from the pot and set aside.

Add Liquids and Seasonings
Stir in the beef broth, dried thyme, and bay leaves. Return the seared lamb shanks to the pot. Ensure the shanks are mostly covered with the liquid. Bring to a gentle simmer.

Cover the pot with a lid, reduce the heat to low, and let it braise for about 2 to 2.5 hours, or until the lamb is tender and falling off the bone. Check occasionally and add more broth or water if needed to keep the shanks submerged.
