Preparation

    Prepare the Beef

    Start by selecting high-quality beef tenderloin. Trim any excess fat and sinew. Using a sharp knife, hand-chop the beef into small, uniform pieces. Ensure the pieces are finely chopped but not pureed.

    Mix the Ingredients

    In a mixing bowl, combine the chopped beef, finely chopped shallot, capers, Dijon mustard, and Worcestershire sauce. Gently fold the ingredients together using a spatula or a fork.

    Season the Mixture

    Drizzle olive oil over the mixture and season with salt and black pepper to taste. Add the chopped parsley and mix gently to combine all ingredients evenly.

    Prepare the Egg Yolk

    Carefully separate the egg yolk from the egg white. Place the yolk in a small dish, ready to serve atop the tartare.

    Plate the Tartare

    Using a ring mold or a small bowl, mold the beef mixture into a round shape on a chilled plate. Carefully remove the ring or bowl.

    Place the egg yolk gently on top of the molded beef tartare.

    Garnish the tartare with sliced cornichons and a handful of microgreens for an added touch of flavor and presentation.
