Cheese Nachos

Preheat the oven to 375°F (190°C). Spread half the tortilla chips in an even layer on a large rimmed baking sheet or oven-safe platter.

Scatter half the shredded cheddar and Monterey Jack evenly over the chips, then add remaining chips in a second layer and top with remaining cheeses to create an even cheesy stack.

Top with pickled jalapeños and a few spoonfuls of diced tomatoes (you’ll finish with fresh tomatoes and green onion after baking).

Bake 8–10 minutes until cheeses are melted and bubbly. Remove from oven and immediately sprinkle with diced tomatoes, sliced green onions and crumbled queso fresco if using. Keep warm until serving.

Cheese Quesadilla

Heat a large nonstick skillet over medium heat. Spread 1/2 tbs butter in the pan and place one flour tortilla in the skillet.

Sprinkle about 1/2 cup cheddar and 1/3 cup Monterey Jack evenly over half the tortilla. Fold the tortilla over to make a half-moon.

Cook 2–3 minutes per side, pressing gently, until golden brown and cheese is melted. Add remaining butter as needed and repeat to make 4 quesadillas. Cut each into 4 wedges and keep warm.

Buffalo Wings

Preheat oven to 425°F (220°C). Pat wings very dry with paper towels. Toss wings with baking powder, salt and black pepper in a large bowl to coat evenly.

Arrange wings on a wire rack set over a rimmed baking sheet, spacing them so air can circulate. Bake 40–50 minutes, flipping once halfway, until skin is crisp and internal temp reaches 165°F (74°C).

While wings bake, combine butter, hot sauce and honey (if using) in a small saucepan over low heat, stirring until butter melts and sauce is smooth. Keep warm.

When wings are done, toss hot wings in the buffalo sauce until evenly coated. Transfer to a serving dish and reserve extra sauce on the side.

Beef Taquitos

For the filling: heat 1 tbs vegetable oil in a skillet over medium heat. Add 1/2 cup diced onion and sauté 3–4 minutes until translucent. Add 1 lb ground beef and cook, breaking up, until browned, about 6–8 minutes. Stir in 1 tsp cumin, 1 tsp chili powder, 1 tsp salt and 1 tsp minced garlic; cook 1 minute more. Taste and adjust seasoning.

Warm corn tortillas to make them pliable: wrap stacks of 6–8 in damp paper towels and microwave 30–45 seconds or heat briefly on a hot skillet, keeping them covered.

Spoon about 2 tablespoons of beef filling onto the lower third of each tortilla, roll tightly and place seam side down on a tray. Repeat with remaining tortillas and filling (should make about 16 taquitos).

Heat about 1 cup vegetable oil in a heavy skillet over medium-high heat to 350°F (175°C) (or heat in a deep fryer). Fry taquitos in batches seam side down until crisp and golden, 2–3 minutes per side. Drain on paper towels. Alternatively, bake on a parchment-lined sheet at 425°F (220°C) for 12–15 minutes, turning once, brushing lightly with oil, until golden.

Beef Flautas

If using leftover shredded beef, warm it in a skillet with 1/4 cup diced onion, 1/2 tsp garlic and 1/2 tsp cumin to meld flavors. Adjust salt as needed.

Warm flour tortillas briefly to make pliable. Place roughly 3–4 tablespoons of shredded beef on each 8-inch tortilla, roll tightly and secure seam side down on a tray.

Heat 1 cup vegetable oil in a skillet over medium-high heat to 350°F (175°C). Fry flautas in batches until crisp and golden, 3–4 minutes, turning as needed. Drain on paper towels. For a lighter option, bake at 425°F (220°C) for 15–18 minutes, turning once and brushing with oil.

Fresh Guacamole

Halve avocados, remove pits and scoop flesh into a mixing bowl. Mash with a fork to desired texture (chunky or smooth).

Stir in diced red onion, diced tomato (if using), lime juice, chopped cilantro, salt, pepper and minced jalapeño. Taste and adjust lime and salt. Cover with plastic pressed to the surface and refrigerate until serving.

Sour Cream Dipping Sauce

Whisk sour cream with lime juice and salt until smooth. Fold in chopped chives or green onion if using. Chill until ready to serve.

Assembly & Serving

Choose a large platter or wooden board to arrange items family-style. Place baked cheese nachos on one area (keep warm), stack quesadilla wedges nearby, and arrange buffalo wings in a cluster.

Group taquitos and flautas in separate sections so guests can choose. Add small bowls of fresh guacamole and sour cream dipping sauce on the platter or alongside.

Garnish with fresh cilantro leaves and lime wedges. Serve immediately while hot, providing extra napkins and small plates for sharing.
