Pupusa dough

Combine masa harina and salt in a large bowl. Add warm water gradually, mixing with a spoon until the dough comes together. Knead by hand 2–3 minutes until smooth and pliable but not sticky. If dough is dry, add water 1 tbs at a time; if too sticky, sprinkle a little masa harina. Let rest, covered with a damp towel, 15 minutes.

Divide dough into 12 equal pieces for medium pupusas (about 2.5–3 oz / 45–55 g each). Keep portions covered to prevent drying.
Prepare fillings

Cheese
Mix grated cheese with 1/4 tsp salt in a bowl. Keep refrigerated until ready to stuff.

Loroco & cheese (optional)
Combine grated cheese and chopped loroco with 1/4 tsp salt. If loroco is frozen, thaw and squeeze out excess moisture. Set aside.

Revueltas (beans & cheese, optional)
If beans are very thick, warm slightly to make them spreadable. Combine with grated cheese so the mixture holds together but is not runny.
Assemble pupusas

Lightly wet your hands. Take one dough ball and press into a flat disk about 3½–4 inches across and 1/4 inch thick, making a rim thicker than the center.

Place 1.5–2 tbs of your chosen filling (cheese, loroco-cheese, or bean-cheese) in the center of the disk. Fold the edges up and around the filling to seal, pinching to close and forming a smooth ball again. Work quickly so the dough doesn't dry.

Gently flatten the stuffed ball between your palms into a 1/2 inch thick round (about 4–4½ inches). If cracks form, patch with small bits of dough. Dust with a little extra masa if sticky.

Repeat with remaining dough and filling. Aim for 12 pupusas.
Cook pupusas

Place pupusas on the hot griddle, leaving space between them. Cook 3–4 minutes until golden brown on the bottom and filling starts to meld. Flip and cook another 3–4 minutes, pressing gently with a spatula to ensure even contact. The cheese should be melted and the exterior slightly blistered. If cooking many, keep cooked pupusas covered with a clean towel to stay warm and soft.
Curtido (pickled cabbage)

Combine sliced cabbage, shredded carrot and sliced onion in a nonreactive bowl or jar. Sprinkle 1 tsp salt and 1/2 tsp dried oregano. Toss to combine.

Stir together vinegar and water, pour over vegetables so they are mostly submerged. Add red pepper flakes if using. Press down with a spoon or plate so liquid covers vegetables.

Let curtido sit at room temperature 30 minutes for a quick pickle, then refrigerate at least 1 hour before serving for best flavor (overnight is best). Drain slightly before serving with pupusas.
Salsa roja

Bring a small skillet to medium-high. Roast whole tomatoes and jalapeño until skin is blistered and blackened in spots, turning occasionally, about 8–10 minutes. You can roast onion quarters and whole garlic cloves alongside for 6–8 minutes until softened and lightly charred.

Transfer roasted tomatoes, jalapeño (stem removed), onion, and garlic to a blender or food processor. Add 1 tsp oil and 3/4 tsp salt. Purée until smooth, adding up to 2 tbs water to reach desired consistency. Taste and adjust salt or heat. If you prefer a cooked salsa, simmer blended salsa 3–5 minutes in a small saucepan to meld flavors.
To serve

Serve 2 pupusas per person (recipe yields 12; serves 6). Plate pupusas hot with a generous scoop of curtido and a spoonful of salsa roja on the side or drizzled over. Provide extra salsa and curtido to taste.

Leftover pupusas keep refrigerated up to 3 days; reheat on a skillet over medium heat until warmed through and crisped, about 2–3 minutes per side.
