    Warm the refried beans

    Place 1/2 cup of cooked refried beans in a small saucepan over low heat. Add a splash (about 1 teaspoon) of water if too thick and stir occasionally until warmed through, about 3–4 minutes. Keep covered on the lowest heat to maintain temperature.

    Prepare the eggs

    Crack 2 large eggs into a small bowl, add 1/4 teaspoon salt and 1/8 teaspoon black pepper, and whisk until combined.

    Cook the eggs

    Heat a nonstick skillet over medium-low and add 1 teaspoon butter or oil. Once shimmering, pour in the beaten eggs. For soft-scrambled eggs: let eggs sit undisturbed 10–15 seconds, then gently stir with a silicone spatula, folding until soft curds form and eggs are just set, about 1–2 minutes. Remove from heat immediately to avoid overcooking.

    Warm the tortilla

    Warm the flour tortilla for pliability: heat a dry skillet over medium-high and warm the tortilla 20–30 seconds per side until lightly browned spots appear and it becomes flexible. Alternatively, wrap in a damp paper towel and microwave 15–20 seconds.

    Assemble the baleada

    Place the warmed tortilla on a plate. Spoon the warmed refried beans in a line or semicircle covering roughly the center 1/3 of the tortilla (about 1/2 cup). Top the beans with the cooked eggs, spreading them evenly across the beans. Sprinkle 1/4 cup queso rallado over the eggs so it begins to melt from residual heat. Drizzle 2 tablespoons crema over the filling (or spread it on the tortilla first if preferred).

    Fold and finish

    Fold the tortilla in half over the fillings. If you like a slightly crisp exterior, return the folded baleada to the hot skillet for 30–60 seconds per side to seal and lightly toast, pressing gently with a spatula. Serve immediately.

Optional garnishes / pack additions

    Add slices of avocado on top of the filling before folding, or serve on the side. Spoon pickled jalapeños or curtido and drizzle hot sauce to taste. Sprinkle chopped cilantro over the finished baleada for a fresh finish.

    To make a pack (multiple baleadas): multiply quantities by the number of baleadas. Keep warm components (eggs and beans) in covered containers and warm tortillas just before assembling to maintain texture. Pack crema and garnishes separately to add at service.
