    Activate yeast

    In a small bowl, combine warm water (about 105–115°F / 40–46°C) and 1 tsp of the granulated sugar. Sprinkle the active dry yeast over the water, stir gently, and let sit 5–10 minutes until foamy.

    Warm milk and melt butter

    Warm the whole milk until lukewarm (about 100°F / 38°C). In a separate small pan or microwave, melt the butter and let cool slightly.

    Combine dry ingredients

    In the bowl of a stand mixer fitted with a dough hook (or a large mixing bowl), whisk together the all-purpose flour, remaining granulated sugar, and fine salt.

    Mix wet and dry

    Add the foamy yeast mixture, warmed milk, melted butter, and eggs to the dry ingredients. Mix on low speed until combined, then increase to medium and knead for 6–8 minutes until the dough is smooth, slightly tacky, and elastic. If kneading by hand, turn out onto a lightly floured surface and knead 8–10 minutes.

    First rise

    Place the dough in a lightly oiled bowl, cover with plastic wrap or a clean kitchen towel, and let rise in a warm draft-free place until doubled in size, about 1 to 1¼ hours.

    Prepare fillings

    While the dough rises, grate the Salvadoran queso and stir it together with the sweetened crema in a bowl. If using, mix the sweetened condensed milk with vanilla extract and reserve to spread lightly in the quesadillas for additional sweetness. Adjust sweetness to taste — the queso remains slightly salty/acidic which balances the sweet components.

Shaping and assembly

    Divide dough

    After the dough has doubled, gently deflate and turn it onto a lightly floured surface. Divide the dough into 12 equal portions (each should weigh about 100–120 g depending on exact dough yield). Shape each portion into a smooth ball and let rest under a towel for 10 minutes.

    Roll out and fill

    Working with one dough ball at a time, flatten each ball with your palm and roll into a circle about 4–5 inches (10–12 cm) diameter and about 1/8–1/4 inch thick. Place about 2 tablespoons of the grated queso mixed with a heaping teaspoon of crema in the center of each circle (adjust amount so the quesadilla will close without overflowing). If using condensed milk mixture, brush a thin layer on the interior of the dough before adding cheese for extra sweetness. Fold or pinch the edges to form a slightly sealed round or leave open-faced depending on preference; traditional Salvadoran quesadillas are round and slightly domed.

    Second rest

    Arrange the assembled quesadillas on parchment-lined baking sheets 1 inch apart. Cover loosely with plastic wrap or a towel and let rest 20–30 minutes to puff slightly.

Baking and finishing

    Preheat oven

    While quesadillas rest, preheat the oven to 375°F (190°C). Position racks in the center of the oven.

    Egg wash and sugar

    Brush each quesadilla lightly with the egg wash (this gives a glossy finish). Then brush or lightly brush with melted butter for a richer flavor and sprinkle each with about 1/3 teaspoon of granulated sugar (use remaining sugar evenly across the dozen).

    Bake

    Bake the quesadillas on the parchment-lined sheets for 14–18 minutes, rotating the pans halfway through, until the tops are golden brown and the interior is set. Baking time may vary with oven and thickness; watch for a light golden color rather than deep browning.

    Finish with butter and crema

    Remove from oven and immediately brush the tops with the remaining melted butter for sheen and softness. If desired, warm the sweetened crema slightly and drizzle or serve on the side for spreading. Let cool on a rack for 10–15 minutes before packaging.

    Once cooled to warm, stack or arrange the dozen quesadillas in a food-safe container or box, separating layers with parchment paper. Serve at room temperature or gently reheat before serving.
