Fried Plantains

    Prepare plantains

    Peel the ripe plantains: cut off both ends, slice a shallow lengthwise slit through the skin, and remove the peel. Slice each plantain on a diagonal into 1/3-inch (about 8 mm) thick slices.

    Heat oil

    In a large heavy skillet (cast-iron recommended), pour enough vegetable oil to come about 1/4 inch up the side (about 1 cup for a 10-inch skillet). Heat over medium-high until shimmering but not smoking (about 350°F / 175°C).

    Fry plantains

    Working in a single layer and in batches to avoid crowding, add plantain slices to the hot oil. Fry 2–3 minutes per side, until golden brown and caramelized at the edges. Use tongs or a slotted spoon to turn them gently.

    Drain and season

    Transfer fried plantains to a paper-towel-lined plate to drain. While still hot, sprinkle with 1 teaspoon salt (or to taste). Keep warm in a low oven (200°F / 95°C) if frying multiple batches.

Crema (quick)

    Combine 1 cup sour cream or Mexican crema, 1 tablespoon lime juice, 1 teaspoon honey (optional), and 1 teaspoon salt in a small bowl. Whisk until smooth and taste — adjust salt or lime as needed. Chill or refrigerate briefly while preparing other components. The crema should be pourable; if too thick, thin with 1–2 teaspoons of milk or reserved bean liquid.

Refried Beans

    Sauté aromatics

    Heat 2 tablespoons vegetable oil or lard in a medium skillet over medium heat. Add 1/2 small finely chopped white onion and sauté 4–5 minutes until softened and translucent. Add 2 minced garlic cloves and cook 30–45 seconds until fragrant.

    Add beans and season

    Add 2 cups drained pinto beans to the skillet along with 1/4 cup reserved bean liquid (or water), 1/2 teaspoon ground cumin, 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Stir to combine and let simmer 2–3 minutes so flavors meld and liquid reduces slightly.

    Mash to desired texture

    Using a potato masher or the back of a spoon, mash the beans to your preferred consistency — completely smooth or slightly chunky. If mixture becomes too thick, add additional reserved bean liquid or water, 1 tablespoon at a time, until you reach a spreadable refried texture.

    Finish

    Cook mashed beans, stirring, another 1–2 minutes to heat through and concentrate flavors. Taste and adjust salt. Remove from heat and keep warm until serving.

To Serve / Garnish

    Plate: Spoon a generous portion of warm refried beans onto each plate. Arrange 6–8 fried plantain slices (about 2–3 per person depending on size) alongside or on top of the beans. Drizzle crema over the plantains and beans (about 2 tablespoons crema per serving), sprinkle with chopped cilantro, and serve with lime wedges for squeezing.
