Tajadas de Plátano (Fried Sweet Plantains)

    Prepare aromatics

    Heat a large skillet over medium heat and add 2 tbs achiote or vegetable oil. When shimmering, add the diced onion and bell pepper and sauté 4–6 minutes until softened and translucent. Add the minced garlic and sauté 30 seconds until fragrant.

    Combine beans and rice

    Add the cooked beans with about 2–3 tbs of their cooking liquid to the pan. Stir in the sazón (or cumin + annatto) and cook 1–2 minutes to meld flavors. Add the rice, breaking up any clumps, and fold gently to combine so rice picks up the color and flavor of the beans. If rice seems dry, add up to 1/4 cup broth or reserved bean liquid.

    Season and finish: Taste and season with 1 tsp salt and 1/2 tsp black pepper, adjusting to preference. Stir in chopped cilantro if using. Cook another 2–3 minutes undisturbed to develop a slight crust on the bottom (optional). Keep warm until serving.

Queso Frito (Fried Cheese)

    Prep cheese

    Pat cheese pieces dry with paper towels. Lightly dust all sides with cornstarch, shaking off excess.

    Fry

    Pour about 1/2 inch of vegetable oil into a heavy skillet and heat over medium-high until it registers 350°F (180°C) or a small piece of cornstarch sizzles on contact. Fry cheese pieces 2–3 minutes per side until golden brown and crisp. Work in batches so oil temperature remains steady.

    Drain: Transfer fried cheese to paper towels to drain briefly. Serve immediately so cheese remains crisp outside and melty inside.

Tajadas de Plátano (Fried Sweet Plantains)

    Prep plantains

    Peel the ripe plantains by cutting off the ends and making a shallow slit along the peel; remove peel and slice diagonally into 1/3-inch to 1/2-inch thick slices.

    Fry

    Heat 1/2 inch of vegetable oil in a wide skillet over medium heat until hot but not smoking (about 325–350°F/160–175°C). Fry plantain slices in batches, 2–3 minutes per side, until deeply golden and caramelized. Remove with a slotted spoon to paper towels; sprinkle lightly with 1/4 tsp salt while hot.

Ensalada de Repollo (Cabbage Salad)

    Assemble

    In a large bowl combine shredded cabbage and grated carrot.

    Dress and toss

    Whisk together white vinegar, lime juice, sugar, salt, pepper, and optional 1 tsp oil. Pour over cabbage mixture and toss thoroughly to coat. Let rest 10–15 minutes so flavors meld and cabbage softens slightly. Taste and adjust seasoning.

Chilero (Nicaraguan Hot Sauce)

    Blend

    Place the red chiles (stemmed), 1 garlic clove, 2 tbs vinegar, 2 tbs water, and 1/4 tsp salt in a blender or mortar and pestle. Blend to a smooth or slightly chunky sauce depending on preference. If too thick, add a tsp of water at a time until desired consistency.

    Taste and adjust salt or vinegar. Keep refrigerated until serving; it will keep a few days.

To Serve

    Optional fried eggs

    If using, heat a small amount of oil in a nonstick skillet over medium heat and fry eggs sunny-side up or to desired doneness (about 2–3 minutes for runny yolk). Season with salt and pepper.

    Plate: Divide gallo pinto among 4 plates (about 1 cup each). Add 3 pieces of queso frito, 3–4 slices of tajadas, a generous scoop of ensalada de repollo, and a spoonful of chilero. Top with a fried egg if desired and serve with lime wedges.
