Prepare corn base

Blend kernels
If using fresh corn, cut kernels off the cobs. Place 3 cups corn kernels, 2 cups water and 1 tablespoon sugar in a blender. Blend on high until a very smooth, slightly frothy puree (about 45–60 seconds).

Pour the blended mixture through a fine-mesh sieve or cheesecloth into a bowl or pitcher, pressing with the back of a spoon or a spatula to extract as much liquid and starchy pulp as possible. Discard solids (or reserve a small amount to stir back in for texture). You should have roughly 2 to 2 1/2 cups of corn liquid.

Combine liquids
In a medium saucepan, combine the strained corn liquid, 2 cups whole milk, and 1 cup heavy cream. Whisk in the remaining sugar (about 2 tablespoons, or to taste), 1 teaspoon ground cinnamon, 1 teaspoon vanilla extract, 1 teaspoon unsalted butter, and a pinch of salt.

Simmer gently
Place the saucepan over medium-low heat. Stir constantly with a wooden spoon or whisk to prevent scorching. Bring the mixture up to a gentle simmer — small bubbles forming at edges — but do not boil. Continue to cook and stir for 6–8 minutes until the beverage has slightly thickened and feels creamy on the spoon.

Adjust texture
If you prefer a thicker atol, take 1–2 tablespoons of the hot mixture, whisk it with 1 teaspoon cornstarch (optional; not listed in main ingredients) or masa harina to form a slurry, then whisk it back into the pot and simmer 1–2 more minutes. (If you want strict adherence to provided ingredients, skip the slurry and simmer until desired thickness.)

Taste and sweeten
Taste and adjust sweetness, adding up to 1 more tablespoon sugar if desired. Remove from heat.

Stir in an additional splash (1–2 tablespoons) of heavy cream for extra silkiness if desired. Let sit for 2 minutes to integrate flavors.
Serve & garnish

Ladle the atol de elote into warmed mugs or heatproof glasses. Sprinkle a light dusting (about 1/2 teaspoon) of ground cinnamon on top or add a cinnamon stick. If using, garnish with 1–2 tablespoons toasted corn kernels or crumbled tortilla chip for a contrasting texture. Serve hot.
