Method

Prepare corn and blend

    Remove kernels

    If using fresh corn, shuck the ears and cut kernels off the cob with a sharp knife. Measure 3 cups of kernels. If using frozen corn, measure and thaw slightly so it blends easier.

    Blend corn

    Place the corn kernels, 1 cup water, and 1 cup of milk into a blender. Blend on high until smooth and slightly frothy, about 45–60 seconds. Work in batches if necessary so the blender is not overfilled.

    Strain

    Strain the blended corn through a fine-mesh sieve or chinois into a medium saucepan, pressing solids with the back of a spoon to extract as much liquid and starchy puree as possible. Reserve the solids (okara) for another use (like adding to pancakes) or discard.

Cook and thicken

    Combine liquids

    To the saucepan with the strained corn liquid, add the remaining 3 cups milk (so total milk used is 4 cups), the cinnamon stick (if using), and salt. Stir to combine.

    Dissolve corn flour

    In a small bowl, whisk together the masa harina (or pinole) with 2–3 tablespoons of cold milk from the 4 cups to form a smooth slurry with no lumps. This prevents clumping when added to hot liquid.

    Heat gently

    Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent scorching. When small bubbles appear at the edges and steam rises (do not boil vigorously), slowly whisk in the masa slurry.

    Simmer and thicken

    Reduce heat to medium-low and continue to cook, stirring constantly or very frequently, until the atol thickens to a creamy, pourable consistency — about 6–10 minutes. The texture should be thicker than milk but thinner than pudding. If it becomes too thick, whisk in a splash of warm milk to loosen.

Sweeten and finish

    Sweeten

    Add the granulated sugar and ground cinnamon to the pot, stirring until the sugar dissolves completely. Taste and adjust sweetness, adding more sugar 'to taste' if desired.

    Enrich and flavor

    Remove the cinnamon stick. Stir in the vanilla extract, butter (if using), and a pinch of nutmeg. Heat just until the butter melts and everything is combined, about 1 minute. Do not boil.

    Serve

    Ladle the atol de elote into warmed mugs or bowls. Sprinkle a little extra ground cinnamon or nutmeg on top if desired. Serve hot.

    Storage

    Let leftover atol cool to room temperature, then refrigerate in a covered container for up to 3 days. Reheat gently on the stovetop over low heat, stirring and adding a splash of milk if needed to restore consistency.
