Prepare the Filling

In a large mixing bowl, combine the cooked shredded chicken, ground beef, carne asada, or shredded beef. Mix well and set aside.

Prepare the Sauces

In separate bowls, have the red, green, mole, and suiza sauces ready for assembly.

Fill the Tortillas

Warm the corn tortillas in a skillet or microwave until pliable. Take one tortilla, place 1/4 cup of the filling mixture in the center, and sprinkle with shredded cheese. Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat for all tortillas.

Add Sauce

Once all the tortillas are rolled and placed in the baking dish, pour your choice of sauce (red, green, mole, or suiza) evenly over the enchiladas. Ensure they are well-coated.

Bake

Preheat your oven to 375°F (190°C). Bake the enchiladas for 20-25 minutes or until the cheese is melted and the sauce is bubbling.

Serving

Garnish and Serve

Remove the enchiladas from the oven. Top with sour cream, chopped cilantro, sliced jalapeños, and diced onions as desired. Serve hot and enjoy your Enchiladas Del Sur!
