Preparation of Steak

Marinate the Steak

In a bowl, combine the flank steak with olive oil, salt, and black pepper. Ensure the steak is well coated. Cover and let it marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for more flavor.

Cook the Steak

Preheat a grill or skillet over medium-high heat. Once hot, add the marinated flank steak. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 135°F for medium-rare. Adjust the cooking time for desired doneness.

Rest the Steak

Remove the steak from heat and let it rest for 10 minutes. This helps retain the juices.

Cube the Steak

Once rested, chop the steak into small cubes and set aside.

Combine Ingredients

In a mixing bowl, combine the diced tomatoes, chopped onion, diced jalapeño, chopped cilantro, and lime juice. Stir until well mixed.

Taste the sauce and adjust seasoning with salt or additional lime juice, if needed.
