Preparation
Prepare the Fillings
In a medium bowl, season the shredded chicken and shredded beef with salt and pepper. Mix in half of the chopped onions and chopped cilantro into each filling.
Prepare the Sauces
In separate bowls, prepare the red and green enchilada sauces. For the suiza sauce, you can mix sour cream with a bit of water or milk until you reach a pourable consistency.
Assembly
Fill the Tortillas
Warm the corn tortillas in a skillet or microwave until soft. Place 1/3 cup of shredded cheese in the center of one tortilla for the red enchilada. For the green enchilada, use 1/3 cup of shredded chicken, and for the suiza, use 1/3 cup of shredded beef.
Roll the Enchiladas
Roll each tortilla tightly around the filling and place seam-side down in a greased baking dish.
Baking
Add the Sauces
Once all enchiladas are in the baking dish, pour the red sauce over the cheese enchiladas, the green sauce over the chicken enchiladas, and the suiza sauce over the beef enchiladas.
Serving
Garnish and Serve
Remove from the oven and let cool for a few minutes. Garnish with the remaining chopped onions and cilantro. Serve with additional sour cream on the side.
