    Prepare the Pineapple Slaw

    In a large bowl, combine the pineapple, red cabbage, carrot, cilantro, and lime juice. Toss to mix well and set aside.

    Make the Spicy Mayo

    In a small bowl, mix together the mayonnaise and Sriracha sauce. Adjust the spice level to your liking and set aside.

    Blacken the Mahi-Mahi

    Pat the mahi-mahi fillets dry with paper towels. Rub both sides of each fillet with olive oil and generously coat with blackening spice mix. Heat a skillet over medium-high heat and cook the fillets for about 3-4 minutes on each side until blackened and cooked through.

    Assemble the Tacos

    Warm the corn tortillas in a dry skillet or microwave. Place a blackened mahi-mahi fillet on each tortilla, top with pineapple slaw, and drizzle with spicy mayo. Season with salt and pepper to taste.
