Preparation of Vegetables

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, bell peppers, zucchini, and mushrooms. Sprinkle with salt and black pepper. Sauté for about 5-7 minutes, or until the vegetables are tender. Remove from heat and set aside.
Assembling the Quesadilla

Fill the Tortilla
Place one flour tortilla in the skillet over medium heat. Sprinkle 1/2 cup of shredded cheese on one half of the tortilla. Layer with sautéed vegetables, then top with another 1/2 cup of cheese. Fold the tortilla over to cover the filling.
Cooking the Quesadilla

Cook the Quesadilla
Cook the quesadilla for 3-4 minutes on one side until golden brown and the cheese is melted. Carefully flip and cook the other side for an additional 3-4 minutes.

Serve the Quesadilla
Cut the cooked quesadillas into wedges and serve warm with the prepared salsa on the side.
