Method

Preparation of Marinade

  1. 1

    Mix Marinade Ingredients

In a bowl, combine olive oil, lime juice, cumin, chili powder, salt, and black pepper. Whisk until well blended.

  2. 2

    Marinate the Steak

Place the flank steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it's well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking the Steak and Vegetables

  1. 3

    Prepare Vegetables

Slice the bell peppers and onion into thin strips. Mince the garlic cloves.

  2. 4

    Cook the Steak

Heat a large skillet or grill over medium-high heat. Remove the steak from the marinade, allowing excess to drip off. Cook the steak for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove from the heat and let it rest for 5 minutes.

  3. 5

    Cook the Vegetables

In the same skillet, add a little olive oil if needed. Add the sliced bell peppers, onion, and minced garlic. Sauté for about 5-7 minutes until the vegetables are tender and slightly charred.

Assembly

  1. 6

    Slice the Steak

After the steak has rested, slice it against the grain into thin strips.

  2. 7

    Assemble Fajitas

Warm the flour tortillas in a dry skillet or microwave. On each tortilla, layer some sliced steak, sautéed vegetables, and your choice of toppings such as sour cream, shredded cheese, fresh cilantro, and sliced jalapeños.

  3. 8

    Serve

Fold the tortillas around the filling and serve immediately.
