Prepare the Dough

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well blended.

Add Shortening
Add the shortening (or unsalted butter) to the dry ingredients and mix with your fingertips until the mixture resembles coarse crumbs.

Add Water
Gradually pour in the warm water, mixing until the dough comes together. Knead the dough on a floured surface for about 2-3 minutes until smooth. Cover with a cloth and let it rest for 30 minutes.
Fry the Sopapillas

Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Roll Out Dough
On a floured surface, roll out the rested dough to about 1/8 inch thick. Cut into squares or triangles, about 3-4 inches wide.

Fry the Sopapillas
Carefully place the cut dough into the hot oil, frying them in batches. Fry until they puff up and turn golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them from the oil and drain on paper towels.
