Method
To Prepare the Pork Skin Basket
- 1
Prepare the Pork Rinds
In a large bowl, mix the pork rinds with salt, paprika, and garlic powder until evenly coated.
- 2
Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until hot, about 350°F (175°C).
- 3
Fry the Pork Skins
Carefully add the seasoned pork rinds to the hot oil, frying in batches if necessary. Fry until they puff up and become crispy, about 2-4 minutes. Remove with a slotted spoon and drain on paper towels.
- 4
Shape into Baskets
While still warm, shape the fried pork rinds into a basket shape on a plate or in a muffin tin to hold their form as they cool.
To Prepare the Filling
- 5
Combine the Filling Ingredients
In a mixing bowl, combine the shredded cooked pork, shredded lettuce, diced tomatoes, and sliced jalapeños. Mix well.
- 6
Assemble the Baskets
Once the pork skin baskets have cooled and hardened, carefully fill each basket with the prepared filling. Top with a dollop of sour cream and sprinkle shredded cheese on top.
