Soup Preparation

    Cook the Protein

    In a large pot, heat 1 tablespoon of olive oil over medium heat. Add your choice of chicken, fish, or ground beef. Cook until browned and cooked through (about 5-7 minutes for chicken and fish; 8-10 minutes for ground beef). Remove from pot and set aside.

    Sauté Vegetables

    In the same pot, add another tablespoon of olive oil. Add diced onion, garlic, bell pepper, carrot, and celery. Sauté until vegetables are softened, about 5-7 minutes.

    Combine Ingredients

    Add the canned diced tomatoes (with juice), chicken or vegetable broth, corn, cumin, chili powder, salt, and black pepper to the pot. Stir to combine.

    Simmer the Soup

    Bring the soup to a boil, then reduce heat to low and let it simmer for 20-30 minutes. Return the cooked protein to the pot, stir in lime juice, and simmer for an additional 5 minutes.

Tortilla Strips Preparation

    Prepare the Tortillas

    While the soup is simmering, cut the corn tortillas into strips.

    Fry the Tortilla Strips

    In a frying pan, heat the vegetable oil over medium-high heat. Once hot, add the tortilla strips in batches and fry until golden and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Serving

    Serve the Soup

    Ladle the soup into bowls and top with avocado, cilantro, sour cream, and fried tortilla strips. Optionally sprinkle with shredded cheese.
