    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the chicken breast with fajita seasoning mix and cook for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from skillet and let cool, then slice into strips.

    In the same skillet, add the remaining 1 tablespoon of olive oil. Add sliced bell peppers and onion. Sauté for about 4-5 minutes until the vegetables are tender but still crisp. Mix in the remaining fajita seasoning if desired.
