Cooking the Chorizo

    Cook the Chorizo

    In a medium skillet over medium heat, add the pork chorizo. Cook, breaking it apart with a wooden spoon, for about 7-10 minutes or until it is fully cooked and browned. Stir occasionally to ensure even cooking.

Melting the Cheese

    Add Cheese

    Once the chorizo is browned, reduce the heat to low and sprinkle the shredded cheese evenly over the cooked chorizo. Cover the skillet with a lid and let it cook for an additional 3-5 minutes, or until the cheese is fully melted and bubbly.

    Prepare Tortillas

    While the cheese is melting, warm the flour tortillas in a separate dry skillet over medium heat for about 30 seconds on each side, or until soft and pliable.

    Plate the Choriqueso

    Once the cheese is melted, remove the skillet from the heat. Serve the choriqueso hot, garnished with chopped cilantro, onion, and sliced jalapeños if desired. Place the warm tortillas on the side for dipping.
