Preparing the Marinade

    Make the Marinade

    In a medium bowl, combine olive oil, lime juice, garlic powder, chili powder, cumin, salt, and black pepper. Mix well.

    Marinate the Beef

    Place the flank steak in a resealable plastic bag or shallow dish. Pour the marinade over the beef, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grilling the Beef and Vegetables

    Prepare the Grill

    Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop over medium-high heat.

    Grill the Beef

    Remove the beef from the marinade and let excess marinade drip off. Grill the flank steak for about 6-8 minutes per side, or until it reaches desired doneness. Remove from the grill and let it rest for 5 minutes before slicing.

    Grill the Vegetables

    While the beef is resting, slice the bell peppers and onion into strips. Toss them lightly in olive oil and season with salt and pepper. Grill the vegetables for 4-5 minutes, or until they are tender and slightly charred.

    Thinly slice the rested beef against the grain.

    In each taco shell, add a layer of grilled beef slices, followed by grilled peppers and onions.
