Preparation

    Prepare the Gelatin

    In a small bowl, sprinkle gelatin over 2 tablespoons of cold water and let it bloom for about 5 minutes.

    Heat the Cream Mixture

    In a saucepan, combine heavy cream, sugar, and maple syrup. Heat over medium heat until sugar dissolves and the mixture is warm (do not boil).

    Combine Gelatin

    Remove the saucepan from heat. Stir in the bloomed gelatin until completely dissolved.

    Mix in Chevre and Vanilla

    Add the chevre and vanilla extract to the warm cream mixture. Whisk until smooth and the cheese is fully incorporated.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Refrigerate for at least 4 hours, or until set.

    Prepare Candied Pears

    While the panna cotta sets, prepare candied pears by slicing pears and cooking them in a saucepan with sugar and a splash of water until tender and syrupy.

    Serve

    Once the panna cotta is set, remove from molds (if using), top with candied pears, fresh berries, and herbs before serving.
