Pumpkin Sugar Snap Cookies

Prepare the Dough

In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add in the pumpkin puree and vanilla extract, mixing until well combined.

Combine Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Shape Cookies

Preheat your oven to 350°F (175°C). Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper. Flatten slightly.

Bake

Bake for 12-15 minutes or until the edges are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Chocolate Mousse

Melt Chocolate

In a heatproof bowl, melt the chopped dark chocolate over a double boiler or in the microwave. Set aside to cool slightly.

Whip Heavy Cream

In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

Combine Egg Yolks

In another bowl, whisk the egg yolks with granulated sugar and vanilla extract until pale and fluffy. Stir in the melted chocolate until well mixed.

Fold in Whipped Cream

Gently fold the whipped cream into the chocolate mixture until fully combined.

Chill

Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.

Ginger Lemon Confection

Prepare Syrup

In a saucepan, combine grated ginger, lemon juice, granulated sugar, and water. Bring to a boil over medium heat, stirring until the sugar has dissolved.

Simmer

Reduce heat and let it simmer for about 10 minutes. Remove from heat and let cool.

Strain and Serve

Strain the syrup to remove ginger pieces. Drizzle over the chocolate mousse before serving.
