Prepare the Vegetables
In a skillet over medium heat, add 1 tablespoon of butter or oil. Add the diced onions and bell peppers, and sauté for 3-4 minutes until softened. Add the sliced mushrooms and cook for an additional 2-3 minutes.

Add Spinach and Tomatoes
Stir in the fresh spinach and halved cherry tomatoes, cooking until the spinach wilts, about 2 minutes. Season with salt and pepper. Remove the vegetable mixture from the skillet and set aside.

Cook the Omelet
In the same skillet, add the remaining tablespoon of butter or oil over medium heat. Pour in the whisked eggs and let cook undisturbed for about 2-3 minutes, until the edges start to set.

Add the Filling
Once the eggs are mostly set, add the sautéed vegetables and sprinkle the shredded cheddar cheese on one half of the omelet.

Fold and Serve
Carefully fold the other half of the omelet over the filling and cook for an additional 1-2 minutes until the cheese is melted. Slide the omelet onto a plate and serve with a choice of side.
