    Prepare the Pancake Batter

    In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. In another bowl, whisk the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.

    Cook the Pancakes

    Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2 minutes or until golden brown. Repeat with remaining batter.

    Prepare the Dutch Apple Coulis

    In a saucepan, combine chopped apples, sugar, lemon juice, and cinnamon. Cook over medium heat until apples are soft and the mixture thickens, about 10 minutes. Blend until smooth if desired.

    Make Honey Butter

    In a small bowl, mix softened butter with honey until well combined. Adjust sweetness to taste.

    Stack three pancakes on a plate, drizzle with Dutch apple coulis, add a dollop of honey butter, and finish with maple syrup.
