Prepare the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Do not overmix.

Shape the Biscuits
Turn the dough onto a floured surface and gently knead it 3-4 times. Pat into a 1-inch thick round and cut out biscuits using a biscuit cutter. Place on a baking sheet.

Bake the Biscuits
Bake in preheated oven for 12-15 minutes until golden brown. Remove and set aside.
Sausage Gravy

Cook the Sausage
In a skillet over medium heat, cook the country sausage until browned. Break it up into small pieces as it cooks.

Make the Gravy
Sprinkle the flour over the cooked sausage and stir well. Gradually add milk while stirring. Cook until the gravy thickens. Season with salt and black pepper to taste.

Cook the Potatoes
Spread the potatoes on a baking sheet and roast in the oven at 425°F (220°C) for 25-30 minutes or until golden and crispy, stirring halfway through.
