Tacos al Pastor Preparation

    Marinate the Pork

    In a large bowl, combine the pork shoulder, adobo sauce, minced garlic, cumin, oregano, lime juice, salt, and pepper. Mix thoroughly and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat the grill or a skillet over medium-high heat. Remove the pork from the marinade and grill or sear it until cooked through and slightly charred, about 25-30 minutes, turning occasionally. Once cooked, let it rest for 10 minutes before slicing thinly.

    Prepare the Pineapple and Onions

    While the pork is cooking, cut the pineapple into small pieces and finely chop the onion.

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Assemble the Tacos

    On each tortilla, place a generous amount of sliced pork, top with pineapple pieces, chopped onion, and sprinkle with cilantro.
