Prepare the Dough

In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.

Add Flour

Once boiling, remove from heat and add flour. Stir vigorously until the mixture forms a ball. Let it cool for about 5 minutes.

Incorporate Eggs

Add eggs one at a time, mixing well after each addition until the dough is smooth.

Heat the Oil

In a deep fryer or large pot, heat vegetable oil to 375°F (190°C).

Pipe the Churros

Transfer the dough to a piping bag fitted with a star tip. Pipe 4-6 inch strips into the hot oil, cutting with scissors.

Fry Until Golden

Fry churros until they are golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Coat with Cinnamon Sugar

In a bowl, mix granulated sugar and cinnamon. Roll the warm churros in the cinnamon sugar mixture until coated.

Serve

Serve immediately while warm, optionally with chocolate sauce for dipping.
