    Select a large wooden board or platter. Fan the prosciutto into loose ribbons on one side, fold soppressata into half-moons in another area, stack three mortadella slices slightly overlapped, and place coppa slices in a small pile. Allow spaces between groups for cheeses and accoutrements.

    Remove all cheeses from refrigerator 20–30 minutes before serving to come to room temperature—this improves flavor. Place the firm cheeses (Manchego/Pecorino and cheddar/Comté) on the board and cut one corner of each into wedges to invite serving; leave Brie/Camembert whole with a small cheese knife for spreading, and place the burrata/mozzarella in a shallow dip or small bowl if very soft.
