Aperol Spritz (Classic)

Measure 2 oz Aperol into the glass using a jigger and pour over the ice.

Add 3 oz chilled Prosecco slowly to preserve bubbles.

Top with 1 oz soda water. Gently stir once with a bar spoon to combine — avoid over-stirring to keep effervescence.

Garnish with an orange wheel placed on the rim or floated in the drink. Serve immediately.
Elderflower Spritz

Fill a wine glass with ice to chill the glass.

Pour 1.5 oz elderflower liqueur over the ice.

Campari Grapefruit Spritz (Bitter)

To batch for service: For ~8 Aperol Spritzes, combine 16 oz Aperol and 48 oz Prosecco in a chilled bottle or drink dispenser; keep soda water separate and top each glass with 1 oz soda when serving to maintain fizz.
