Method

Spritz Cocktails

    Prepare glass

    Fill a large wine glass or goblet halfway with large ice cubes to keep the spritz cold without diluting too quickly.

    Add aperitif

    Pour 1 oz Aperol into the glass over the ice. If using the citrus variation, add 0.5 oz fresh grapefruit juice and 0.25 oz simple syrup now.

    Top with sparkling

    Slowly pour 3 oz chilled Prosecco (or other dry sparkling wine) into the glass. Pour gently to preserve bubbles.

    Finish with soda

    Add 1 oz club soda on top to lift and lighten the drink. Stir gently once with a bar spoon or stirrer—one or two slow turns to combine without losing effervescence.

    Garnish and serve

    Garnish with an orange wheel on the rim or floated in the drink. Serve immediately with a straw or stirrer if desired.

Mocktail (non-alcoholic) Option

    Pour 1 oz non-alcoholic bitter aperitif or chilled strong iced tea (for a slightly tannic backbone) into the glass.
