Prepare the Filling
In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Stir in shredded chicken, ground cumin, salt, and black pepper. Cook for an additional 2-3 minutes until heated through. Set aside.

Roll the Enchiladas
Preheat the oven to 350°F (175°C). Take a corn tortilla, add about 2-3 tablespoons of the chicken filling, sprinkle some shredded cheese on top, and roll it tightly. Place seam-side down in a greased baking dish. Repeat until all tortillas are filled.

Add Sauce and Cheese
Pour the enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining shredded cheese on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

Remove from the oven and let cool for a few minutes before serving. Enjoy your enchiladas with toppings like sour cream, avocado, or cilantro if desired.
