Method

Crust

  1. 1

    Prepare the crust

Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted unsalted butter, sugar, and salt. Mix until well combined.

  2. 2

    Form the crust

Press the mixture firmly into the bottom and up the sides of a 9-inch tart pan. Bake for 10-12 minutes, or until lightly golden. Allow to cool.

Custard Filling

  1. 3

    Make the custard

In a saucepan, combine the whole milk, heavy cream, sugar, and vanilla extract. Heat over medium heat until sugar is dissolved and mixture is hot but not boiling.

  2. 4

    Combine eggs and cornstarch

In a separate bowl, whisk together the eggs, cornstarch, and salt until smooth. Gradually whisk in the hot milk mixture to temper the eggs.

  3. 5

    Cook the custard

Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened (about 5-7 minutes). Remove from heat and let cool slightly.

Berry Filling

  1. 6

    Prepare the berry filling

In a medium bowl, toss the mixed berries with granulated sugar and lemon juice. Allow to sit for about 10 minutes to release juices.

Brown Butter Streusel

  1. 7

    Make brown butter

In a small saucepan, melt the unsalted butter over medium heat. Continue to cook, swirling occasionally, until it turns golden brown and smells nutty (about 5 minutes). Remove from heat and let cool slightly.

  2. 8

    Prepare the streusel

In a bowl, combine the flour, brown sugar, and cinnamon. Stir in the brown butter until crumbly. Set aside.

Assembly

  1. 9

    Assemble the tart

Pour the custard filling into the cooled graham cracker crust. Scatter the berry mixture evenly over the custard, then sprinkle the brown butter streusel on top.

  2. 10

    Bake the tart

Bake in the preheated oven for 25-30 minutes or until set and lightly golden on top. Remove from the oven and let cool to room temperature.

  3. 11

    Serve

Slice the tart and serve warm with scoops of vanilla ice cream on the side.
