Winemaking Process
Harvesting Grapes
Select and harvest ripe Cabernet Sauvignon grapes. Ensure they are free of rot and pests.
Crushing and Destemming
Crush the harvested grapes and remove the stems. This can be done manually or with a machine.
Fermentation
Transfer the crushed grapes to a fermentation vessel. Add the packet of malolactic bacteria to initiate fermentation. Allow the mixture to ferment for 7-14 days at a controlled temperature of 22-28°C.
Pressing
After fermentation, press the mixture to separate the liquid wine from the solid grape skins. Collect the juice into a clean container.
Aging
Transfer the wine into French oak barrels for aging. Allow it to age for 12-18 months, depending on the desired flavor profile.
Sulfite Addition
Before bottling, add sulfites to the wine to stabilize and preserve it. Use a precise measurement of 50 mg.
Bottling
Bottle the wine in sterilized bottles. Seal with corks and label appropriately. Store in a cool, dark place.
