Method

Prepare the Patties

    In a mixing bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined, being careful not to overwork the meat.

    Divide the mixture into two equal portions of 4 oz each and form them into loose balls. Flatten them slightly to create patties.

Cook the Patties

    Heat a skillet or griddle over medium-high heat until hot.

    Place the patties on the hot skillet and immediately smash them down with a spatula to create a thin patty, approximately 1/2 inch thick.

    Cook the patties for about 3-4 minutes until a crust forms on the bottom, then flip them.

    After flipping, place a slice of aged cheddar on one patty and a slice of Swiss on the other patty. Cook for an additional 2 minutes or until the cheese is melted and the patties are cooked to your desired doneness.

Make the Dressing

    In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, and Dijon mustard. Mix until well blended.

Toast the Buns

    In a separate pan, melt butter over medium heat.

    Add the brioche buns, cut side down, to the pan and toast until golden brown, about 2-3 minutes.

Assemble the Burger

    Spread the Thousand Island dressing on the bottom half of each toasted brioche bun.

    Add the lettuce leaf and sliced tomato on top of the dressing.

  3. 12

    Place the first burger patty on top of the tomato, followed by the second patty.

  4. 13

    Top the second patty with the remaining dressing and finish with the top half of the bun.
