    Prepare the Steak

    Season the Buckhead Prime Top Sirloin steak with salt and black pepper on both sides.

    Grill the Steak

    Heat a grill or frying pan over medium-high heat. Add olive oil and then the seasoned steak. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

    Rest the Steak

    Remove the steak from the heat and let it rest for 5 minutes before slicing it against the grain.

Chimichurri Sauce

    Mix the Ingredients

    In a bowl, combine chopped parsley, chopped cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt.

    Blend the Sauce

    Stir the mixture until well combined. Adjust seasoning to taste and set aside.

Truffle Fries

    Prepare the Potatoes

    Cut the russet potatoes into fry shapes and soak them in cold water for at least 30 minutes.

    Fry the Potatoes

    Drain and dry the potatoes thoroughly. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes.

    Season the Fries

    Remove fries from oil and drain on paper towels. While hot, drizzle with truffle oil and sprinkle with salt and black pepper.

Plating

    Assemble the Dish

    On a plate, create a bed of baby arugula. Place the sliced steak on top of the arugula and drizzle with chimichurri sauce. Serve the truffle fries on the side.
