Harvesting Grapes
Select ripe Pinot Noir grapes, ensuring they are free from rot or disease. Harvest approximately 1000 grams of grapes.

Crushing Grapes
Place the harvested grapes in a clean fermentation vessel. Crush the grapes by hand or with a crusher until the juices are released.

Mixing Ingredients
Add 500 ml of clean water and 50 grams of granulated sugar to the crushed grapes. Stir well to ensure even distribution.

Adding Yeast
Sprinkle 5 grams of wine yeast over the mixture. Allow it to hydrate for about 15 minutes before stirring it into the mixture.

Fermentation Process
Cover the fermentation vessel with a clean cloth or fermentation lid. Allow the mixture to ferment at room temperature for 7-14 days, stirring daily.

Secondary Fermentation (optional)
If using oak chips, add them after the primary fermentation. Transfer the wine to a secondary fermentation vessel for an additional 2-4 weeks.
