Harvest the Grapes
Carefully harvest the ripe Viognier grapes, making sure to select only the best quality fruits.

Crush and Press
Crush the harvested grapes and press them to extract the juice into a clean fermentation vessel.

Add Water and Ingredients
Add 500 ml of water to the grape juice in the fermentation vessel. Then, dissolve 5 grams of sugar and 1 tsp of acid blend into the mixture. Stir well.

Add Yeast and Pectin Enzyme
Sprinkle 1 tsp of yeast and 1 tsp of pectin enzyme over the mixture. Gently stir to incorporate.

Add Sulfur Dioxide
Carefully add 50 mg of sulfur dioxide to the mixture to prevent oxidation and bacterial growth. Stir gently.

Fermentation
Cover the fermentation vessel with an airlock and allow the mixture to ferment at a controlled temperature for about 2-4 weeks, depending on desired flavor profile.
