Crush the Chardonnay, Pinot Noir, and Pinot Meunier grapes to extract the juice, combining them in a large fermentation vessel.

Dissolve the sugar in filtered water and add it to the grape juice mixture. Sprinkle the yeast over the top and stir gently to combine.

Cover the fermentation vessel with a cloth and let it ferment in a cool, dark place for about 2-3 weeks, checking daily for bubbles in the must.
Secondary Fermentation

Prepare for Secondary Fermentation
Once primary fermentation is complete, strain the liquid to remove solids and transfer it to clean bottles, leaving some space at the top.

Add Secondary Yeast
Add the secondary fermentation yeast to each bottle.

Add Liqueur d'expédition
Measure and add the liqueur d'expédition to each bottle for sweetness.

Seal and Store
Seal each bottle with a cork and wire cage, then store them on their sides in a cool, dark place for at least 6 months to develop flavor and bubbles.
