Roast in Oven
Transfer the skillet to the preheated oven and roast the pork for about 15-20 minutes, or until it reaches an internal temperature of 63°C (145°F).

Sauté Shallots and Mushrooms
While the pork is roasting, slice the shallots and mushrooms. In a separate pan, melt 1 tablespoon of butter over medium heat. Add the shallots and cook until translucent, about 3-4 minutes. Then, add the mushrooms and cook until they are golden brown, about 5-7 minutes.

Once the pork is done, remove it from the oven and let it rest for 5 minutes. Meanwhile, deglaze the skillet used for the pork with the Chambolle Musigny wine, scraping up any browned bits from the bottom. Cook for about 3-4 minutes until the sauce reduces slightly.
