Directions
- 1
Harvesting Grapes
Carefully hand pick the Chardonnay grapes from the vineyard, ensuring they are ripe and free from any rot or damage.
- 2
Crushing and Pressing
Crush the harvested grapes and press them gently to extract the juice. Aim for approximately 550 ml of juice from 750 grams of grapes.
- 3
Fermentation
Transfer the grape juice into a sanitized fermentation barrel. Add the yeast and malolactic bacteria culture to the juice. Let it ferment at a controlled temperature of 12-15°C (54-59°F) for about 2-4 weeks.
- 4
Aging
After fermentation, transfer the wine into a French oak barrel for aging. Allow it to age for 6-12 months, depending on the desired flavor profile.
- 5
Bottling
Once the aging process is complete, filter the wine and add sulfites as a preservative. Bottle the wine in clean bottles and cork them securely.
- 6
Labeling and Storing
Label the bottles with the vintage year and store them in a cool, dark place for further aging if desired.
