Grilled Cheese Sandwich

Tomato Bisque

Method

Grilled Cheese Sandwich

  1. 1

    Prepare the Ingredients

Gather all the ingredients for the grilled cheese sandwich including the sourdough bread, butter, cheeses, roma tomato, bacon jam, and arugula pesto.

  2. 2

    Assemble the Sandwich

Spread bacon jam on one side of two slices of sourdough bread. Layer with cheddar cheese, provolone cheese, sliced roma tomato, and a dollop of arugula pesto. Top with the other two slices of sourdough, bacon jam side down.

  3. 3

    Toast the Sandwich

Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, place the assembled sandwich in the skillet. Cook until golden brown, about 3-4 minutes.

  4. 4

    Flip and Cook

Add the remaining tablespoon of butter to the skillet. Flip the sandwich carefully and cook the other side until golden and the cheese is melted, about 3-4 minutes. Remove from heat and let it cool slightly before slicing.

Tomato Bisque

  1. 5

    Sauté Aromatics

In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened, about 5 minutes.

  2. 6

    Add Tomatoes and Broth

Stir in the canned crushed tomatoes, vegetable broth, salt, black pepper, and sugar. Bring to a simmer and cook for 15-20 minutes, allowing the flavors to meld.

  3. 7

    Blend the Soup

Using an immersion blender, blend the soup until smooth (or transfer to a blender in batches).

  4. 8

    Finish with Cream and Basil

Stir in the heavy cream and fresh basil. Heat through for an additional 5 minutes. Adjust seasoning if necessary.
