Assemble the Sandwich
Spread bacon jam on one side of two slices of sourdough bread. Layer with cheddar cheese, provolone cheese, sliced roma tomato, and a dollop of arugula pesto. Top with the other two slices of sourdough, bacon jam side down.
- 3
Toast the Sandwich
Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, place the assembled sandwich in the skillet. Cook until golden brown, about 3-4 minutes.
- 4
Flip and Cook
Add the remaining tablespoon of butter to the skillet. Flip the sandwich carefully and cook the other side until golden and the cheese is melted, about 3-4 minutes. Remove from heat and let it cool slightly before slicing.

Finish with Cream and Basil
Stir in the heavy cream and fresh basil. Heat through for an additional 5 minutes. Adjust seasoning if necessary.
