    Prepare the Fish

    Rinse the fish fillets under cold water and pat them dry with a paper towel. Season both sides with salt, black pepper, and the blackening spice blend.

    Cook the Fish

    In a skillet, heat the olive oil over medium-high heat. Once hot, carefully place the seasoned fish fillets in the skillet. Cook for about 3-4 minutes per side or until the fish is cooked through and has a nice blackened crust.

    Melt the Cheese

    In the last minute of cooking the fish, sprinkle the shredded cheddar cheese on top. Cover the skillet with a lid to help the cheese melt.

    Prepare the Rolls

    While the fish is cooking, slice the French water rolls in half and toast them until golden brown.

    Assemble the Sandwich

    Spread a generous amount of lemon-caper aioli on the bottom half of each toasted roll. Place a leaf of lettuce on top, followed by a slice of tomato. Carefully add the blackened fish with melted cheese on top of the tomato.

    Top with the other half of the toasted roll. Serve immediately while hot.
